Holidays can bring a great deal of joy…and an equal amount of stress. As I get older, the pressure is on for me to either create a sumptuous holiday feast or to simply contribute a dish to a family potluck feast. Well, as luck would have it, I have only had to contribute dishes and not be at the helm of the holiday feast. Last Thanksgiving, instead of the usual banana pudding that I love to make, I decided to go out of the box and make a pie—my first homemade pie—ever.
I decided to make my favorite Turkey Day pie, a pumpkin pie. The recipe on the back of the can seemed easy enough and I figured that with my basic cooking sense and normal common sense, how hard could it be?
Well, it wasn’t as easy for me as I thought it would be. The end result–inside was undercooked and the outside was overcooked…but what the hey….I tried, right? Well, evidently, the guests at the potluck certainly did not give me an “A” for effort because they all took one look at the pie and dared not to touch it. Only my poor (and very supportive) hubby would eat it because it truly looked like a hot horrible mess. Every time someone would ask who made it, I would try to avoid all eye contact and quietly whisper my name…and basically avoided all references to the pie until I furtively threw it out the back door. Talk about being uncomfortable….
I had to turn the situation around…and fast! I quietly slipped out and drove to the nearest convenience store (since those were the only stores open at that point). Since my options were severely limited, I bought a few family sized packs of pudding cups and a can of Ready Whip, and replaced my miserable pie with the always loved chocolate pudding topped with whipped cream!
